    Kris when you do the sweet potatoes slice a little thinner and roast at 400o and just kind of check on them (as they will check on you!) and if you want them crisper make crisper. You can do the same with broccoli as you do with cauliflower. I think any veggie would do.
    OH, here is one for zucchini:

    Slice into 1/4 ” rounds. Put in bowl. Add olive oil, S/P and Garlic salt or Garlic powder. Layer on cookie sheet and sprinkle with parmesan cheese. Roast at 400o until lightly toasted looking. Another yummo.

    I will have to try the cauliflower trick as well. I DO like broccoli, thankfully, but hate sweet potatoes. So I will be trying the sweet potato recipe as well. If I cut them thin enough, they should crisp up like potato chips, right?? lol
    White pizza with broccoli has garlic, another great food! That’s how I eat it guilt free. (Just saying!)

    My husband agrees with you totally…and well so do I for that matter. I guess you could do a veggie pizza but somehow that is just not the same.

    Gavin you can use any veggies you like but if you want kind of a popcorn taste this works. Got your note and I will get back to you today, promise.

    Aye it’s strange how it always works out like that Jason….. :) I love cauliflower, brocolli and all other veggies as well, but like you say, pizza which I love too never seems to be on these sort of lists or research notes! However, I’m sure that the tomato sauce on a pizza base is good for you! :)

    Lainy, that sounds like a great way to do cauliflowers!

    Jason, great way to make cauliflower. Cut in to small flowerets put in a bowl and add olive oil, s/p/garlic or any seasonings you like. Mix all and spread on Cookie sheet (greased) and roast at 400o about 1/2 hour. It taste like popcorn!One more easy one, peel and slice sweet potatoes in rounds. Mix with olive oil, brown sugar and cinnamon. Put on greased pan at 400o for 1/2 hour. Delish.

    Why does it always have to be brocolli and cualiflower that are good for you rather than beer and pizza! :)
